There are two types of people in the world: those whole live for Thanksgiving dinner and those who live for the leftovers.
I always waffle between the two but I think I’m a leftovers person. I just love having food in the fridge that can easily heated up for when I’m in those hangry moods. And when I’m in the mood to make leftovers into something even better like bestovers…oh man, that’s where I like to shine. Give me all your roast turkey carcass because here I come turkey congee and turkey noodle soups! I think we all know that the best part of Thanksgiving is leftovers, right?
Here’s some inspiration if you want to come over to the bestover side. It’s the best side, if I do say so myself.
Turkey Curry Udon
If you love thick noodles and Japanese curry, this is the ultimate comforting leftover turkey dish: turkey, a slightly spicy, slightly sweet curry sauce, and ALL the udon.
Brunch Banh Mi: Vietnamese Egg and Turkey Sub
Turkey and eggs go together, especially when they’re all tucked into a crispy fluffy baguette with Vietnamese pickles and cilantro.
Thanksgiving Croquettes
This might be my all time favorite bestovers of them all. They take a bit of time, but man, are they amazing! Mashed potato croquettes stuffed with turkey and stuffed, rolled in panko and deep-fried to a crispy crunchy shattering nugget. So good with leftover cranberry sauce.
Turkey Fried Rice
This one’s a classic: take everything in the fridge and make a fried rice. So simple yet so much better than the sum of its parts
Eggs and Crispy Stuffing Cakes
If you love stuffing, you’ll love these little stuffing cakes that are crispy on the outside and fluffy-n-stuffing-y on the inside. Top them off with little quail eggs (or regular ones) and it’s good eats.
Thanksgiving Poutine
Hi, I love poutine and there is almost no better poutine out there than a Thanksgiving poutine with turkey and stuffing and brussels sprouts and cheese curds and turkey gravy and fries.
Turkey Pho
My favorite part of Thanksgiving might just be the turkey carcass because you can make things like turkey pho. So savory and full of noodles and flavor.

This is kind of like a turkey dinner in one dish: creamy béchamel, turkey, carrots, peas and baked with a creamy mashed potato top. I could eat the whole pan!
